تبیین چارچوبی برای ارزیابی پایداری زنجیرۀ تأمین مواد غذایی با استفاده از فرایند تحلیل شبکه‌ای فازی (مورد مطالعه: شرکت‌های منتخب تولیدی فراورده‌های گوشتی استان مازندران)

چکیده

در مقالۀ حاضر به‎منظور دستیابی به هدف پژوهش، یعنی تبیین چارچوبی برای ارزیابی پایداری زنجیرۀ تأمین مواد غذاییْ با مرور ادبیات موضوع، چارچوب ارزیابی پایداری سازمان خواربار و کشاورزی به‎منزلۀ مدل اولیۀ پژوهش معرفی شد. بومی‌سازی و تأیید معیارهای پژوهش با به‎کارگیری روش دلفی ساعتی انجام پذیرفت و درجۀ اهمیت ابعاد و معیارهای چارچوب با استفاده از روش ANP فازی، محاسبه شد. بدین منظور از دیدگاه 12 تن از کارشناسان و خبرگان، شامل پنج خبرۀ دانشگاهی فعال در حوزۀ توسعۀ ‌پایدار و هفت خبره از شرکت‌های تولیدی فراورده‌های گوشتی کالۀ آمل، زربال و تولید و بسته‌بندی طیور فیله، استفاده شد. یافته‌های پژوهش نشان داد سلامت جسمانی، روانی و اجتماعی کارکنان و گازهای گلخانه‌ای با وزن‎های 0787/0 و 0632/0 مهم‌ترین معیارهای دستیابی به زنجیرۀ تأمین پایدارند. همچنین از میان زیرمعیارهای ابعاد حکمرانی و اقتصادی، به‎ترتیب زیرمعیارهای تولید گواهی‌شده و ایمنی مواد غذایی از دیدگاه خبرگان، بالاترین درجۀ اهمیت را کسب کردند. از این چارچوب می‌توان برای ارزیابی بخش‌های مختلف زنجیرۀ تأمین مواد غذایی و سنجش میزان پایداری آنها استفاده کرد.

چکیده [English]

In order to achieve the research objectives, the determinants of framework for assessing the sustainability of food supply chains, literature reviewed and then sustainability assessment framework of Food and Agriculture Organization (FAO) introduced as a research basic model. Localization and verification of research criteria by using the Delphi technique and calculation the importance degree of the criteria by applying fuzzy ANP were done. To do so, the opinions of 12 experts, including 5 academic experts in the field of sustainable development and 7 experts from Meat Production Companies of Kalleh Amol, Zarbal and Production and packaging of Toyur Filleh was used. Research findings showed that Physical, psychological, social employees and greenhouse gas emissions by weight of (0.0787) and (0.0632) are the most important criteria in order to achieve the sustainable supply chain. Also, Among the Sub-criteria of governance and economic dimensions, respectively, certified production and food safety from the perspective of experts have earned the highest degree of importance. This framework can be used to evaluate the different parts of the food supply chain and assess their sustainability.
